Ingredients
- 1 avocado, ripe
- 1 12 cups cooked kidney beans (15 oz can, drained)
- 12 cup mexican-style salsa (preferably fresh)
- 2 -4 tablespoons fresh cilantro
- salt and pepper
Method
- Remove the flesh from the avocado and cube.
- Place in a serving bowl.
- Stir in the kidney beans, salsa and cilantro.
- Add salt and pepper if desired.
- Serve.
