Ingredients
- 6 or 7 large squash, cross sliced
- 1 medium onion, sliced
- 1/2 c. mayonnaise
- 2 beaten eggs
- 3/4 c. shredded Cheddar cheese
- 3/4 c. Pepperidge Farm cornbread crumbs
- 1/2 c. melted margarine
- salt and pepper to taste
Method
- Cook sliced squash and onions until tender.
- Mix eggs and mayonnaise with drained squash and onions.
- Top with shredded cheese and then buttered crumbs.
- Bake at 350° in casserole dish.
