Ingredients
- 1 c. all-purpose flour
- 1 c. yellow cornmeal
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 1/4 c. butter, melted
- 1 egg
- 1 can corn, drained
Method
- Preheat oven to 425°.
- Grease 12 muffin cups.
- In large bowl, mix flour, cornmeal, sugar, baking powder and salt.
- Mix milk, butter and egg in 2nd bowl.
- Add slowly to dry ingredients just until combined.
- Stir in corn gently.
- Spoon into muffin tins. Bake approximately 20 minutes.
- Serve warm.
