Ingredients
- 2 1/2 lb. fresh yellow squash
- salt to taste
- 1 medium onion, sliced
- 3/4 stick margarine
- 1 1/2 c. cracker crumbs or Pepperidge Farm stuffing
- 1 1/2 c. cheese, grated
- 1 can cream of mushroom or celery soup
Method
- Cook squash in a little water until tender.
- Fry onion in margarine until clear.
- Drain squash and mix with onion.
- Add 1 cup cracker crumbs or stuffing mix, 1 cup cheese and soup. Pour into baking dish. Top with rest of crumbs and cheese.
- Bake 30 minutes at 325°.
