Ingredients

  • 1 c. lentils
  • 3 c. rice (extra long rice)
  • 8 c. water
  • 2 tsp. butter
  • 2 medium onions, sliced
  • 1 c. raisins
  • 2 1/2 lb. beef or lamb cubes
  • 6 Tbsp. salt
  • 1/2 tsp. turmeric
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 2 c. water

Method

  • Boil lentils in enough salted water until tender, but not soft.
  • Drain and set aside.
  • Rinse the rice several times in warm water; soak in warm water and set aside.
  • Bring a large pot of salty (2 tablespoons) water to a rapid boil.
  • Drain the water from the soaked rice; pour the rice in boiling water.
  • Boil 8 to 10 minutes.
  • Stir occasionally to prevent the grains from sticking together.
  • Drain the rice in a colander; rinse cold tap water over rice.
