Ingredients
- 2 c. milk
- 1/2 tsp. salt
- 1/2 c. yellow cornmeal
- 3 eggs, separated
- 1/2 tsp. baking powder
Method
- Scald milk.
- Add cornmeal and salt slowly.
- Cook until thick and smooth.
- Cool slightly.
- Add egg yolks one at at time and beat after each addition.
- Beat in baking powder.
- Fold in stiffly beaten egg whites.
- Pour into greased 2-quart casserole.
- Bake in 375° oven for about 35 minutes or until firm and crust is brown. Serve with whipped butter.
- Good with ham or chicken and salad.
