Ingredients

  • 2 c. milk
  • 1/2 tsp. salt
  • 1/2 c. yellow cornmeal
  • 3 eggs, separated
  • 1/2 tsp. baking powder

Method

  • Scald milk.
  • Add cornmeal and salt slowly.
  • Cook until thick and smooth.
  • Cool slightly.
  • Add egg yolks one at at time and beat after each addition.
  • Beat in baking powder.
  • Fold in stiffly beaten egg whites.
  • Pour into greased 2-quart casserole.
  • Bake in 375° oven for about 35 minutes or until firm and crust is brown. Serve with whipped butter.
  • Good with ham or chicken and salad.
