Ingredients
- 1 lb. dry red beans
- 1 lb. smoked sausage
- 1 can Ro-Tel tomatoes
- 1 can stewed tomatoes
- 2 c. Minute rice
Method
- Cook dry beans until done.
- Add smoked sausage, Ro-Tel tomatoes and stew tomatoes.
- Let simmer on low for 30 minutes, then add Minute rice.
- Cook until rice is done.
