Ingredients

  • 2 pkg. fresh spinach
  • 8 oz. fresh mushrooms, sliced
  • 1 medium red onion, chopped
  • 2 carrots, grated
  • 4 hard-boiled eggs, quartered
  • 12 bacon strips, cooked crisp and crumbled (save bacon grease)

Method

  • Clean spinach and break into easy bite sizes.
  • Make sure spinach is completely dry before tossing.
  • In a large bowl toss spinach with sliced mushrooms, chopped onion, grated carrots and crumbled bacon.
  • Put into serving bowl and place egg quarters on top.
  • Refrigerate until ready to serve.
