Ingredients
- 2 pkg. fresh spinach
- 8 oz. fresh mushrooms, sliced
- 1 medium red onion, chopped
- 2 carrots, grated
- 4 hard-boiled eggs, quartered
- 12 bacon strips, cooked crisp and crumbled (save bacon grease)
Method
- Clean spinach and break into easy bite sizes.
- Make sure spinach is completely dry before tossing.
- In a large bowl toss spinach with sliced mushrooms, chopped onion, grated carrots and crumbled bacon.
- Put into serving bowl and place egg quarters on top.
- Refrigerate until ready to serve.
