Ingredients

  • 2 chicken breasts, skinned and halved
  • 1 stalk celery, sliced thick on angle
  • 1 parsley sprig
  • 4 lemon slices (thick slices)
  • 1 onion, diced (large)
  • 1/4 tsp. celery seed
  • 1 green onion, chopped
  • 1 stalk celery, sliced

Method

  • Place chicken first, celery stalk, parsley, lemon slices, diced onion, celery seed, salt and pepper in a saucepan.
  • Cover in water and cook, covered, about 18 minutes, depending on size of chicken breasts.
  • When chicken is done, drain and discard other ingredients.
  • Cut chicken in long slices or dice (large).
  • Place green onion, other celery stalk and paprika.
