Ingredients

  • 2 to 3 c. seasoned croutons, crushed
  • 1/2 c. margarine, melted
  • 1/4 c. chopped onion
  • 2 Tbsp. sour cream
  • 3/8 c. Parmesan cheese
  • 1 tsp. garlic powder
  • 1 c. small curd cottage cheese
  • 4 oz. Monterey Jack cheese, cubed
  • 1/2 tsp. salt
  • 3 eggs, beaten
  • 1 (10 oz.) pkg. frozen, chopped spinach, thawed and drained

Method

  • Combine margarine and enough croutons to line 10-inch pie plate.
  • Combine 1/4 cup Parmesan cheese and remaining ingredients. Spoon into crust.
  • Bake at 350° for 35 minutes.
  • Sprinkle with remaining 1/8 cup of Parmesan cheese.
  • Serves 6 to 8.
