Ingredients
- 1 small onion, minced
- 2 T olive oil
- 16 oz frozen chopped spinach, thawed and squeezed
- 12 oz mascarpone cheese
- 1/2 t. salt and pepper
- 1/4 t cayenne
- 1/2 c. grated parmesan plus some for topping
- 1 loaf baguette, sliced and toasted
Method
- saute onion in oil. add spinach and cook until hot. Add mascarpone and parmesan and stir. Pour into custard dish, top with additional parmesan and bake at 350 for 20-30 minutes until bubbling
