Ingredients

  • 1 medium potato
  • 1/2 tsp. salt
  • 1 egg
  • 1 (15 oz.) can spinach, drained
  • 1 1/3 c. flour
  • 1/2 tsp. pepper
  • grated Parmesan cheese
  • 2 Tbsp. butter
  • 1 onion, chopped
  • 1 c. whipping cream

Method

  • Boil potato until tender, cool slightly and mash.
  • Stir in salt, egg, spinach and flour to make a stiff dough.
  • (Add more flour if you need to.)
  • Shape into 1-inch balls.
  • Heat butter in a 10-inch skillet on medium heat.
  • Saute onions; stir in cream and pepper.
  • Heat to boiling, reduce heat and simmer 10 minutes, until thickened.
  • Heat 4 quarts of water to a boil with 1 tablespoon salt.
  • Add 1/2 of gnocchi.
  • When they rise to top, boil for 4 minutes.
  • Remove and drain.
  • Repeat with other gnocchi.
  • Mix into cream sauce and top with grated cheese.
