Ingredients
- 1 medium potato
- 1/2 tsp. salt
- 1 egg
- 1 (15 oz.) can spinach, drained
- 1 1/3 c. flour
- 1/2 tsp. pepper
- grated Parmesan cheese
- 2 Tbsp. butter
- 1 onion, chopped
- 1 c. whipping cream
Method
- Boil potato until tender, cool slightly and mash.
- Stir in salt, egg, spinach and flour to make a stiff dough.
- (Add more flour if you need to.)
- Shape into 1-inch balls.
- Heat butter in a 10-inch skillet on medium heat.
- Saute onions; stir in cream and pepper.
- Heat to boiling, reduce heat and simmer 10 minutes, until thickened.
- Heat 4 quarts of water to a boil with 1 tablespoon salt.
- Add 1/2 of gnocchi.
- When they rise to top, boil for 4 minutes.
- Remove and drain.
- Repeat with other gnocchi.
- Mix into cream sauce and top with grated cheese.
