Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 2 large onions, chopped
  • 3/4 c. margarine
  • 2 c. corn bread stuffing mix
  • 5 eggs, beaten
  • 1/2 c. Parmesan cheese
  • 2 Tbsp. garlic powder

Method

  • Cook spinach using package directions; drain.
  • Saute onions in margarine in skillet until onions are transparent.
  • Stir in stuffing mix, beaten eggs, Parmesan cheese and garlic powder. Roll into small balls.
  • Place on baking sheet; freeze.
  • Bake at 400° for 15 to 20 minutes or until firm.
  • Serve warm.
  • May store frozen spinach balls in plastic bags in freezer and bake as needed.
