Ingredients
- 2 (10 oz.) pkg. frozen chopped spinach
- 2 large onions, chopped
- 3/4 c. margarine
- 2 c. corn bread stuffing mix
- 5 eggs, beaten
- 1/2 c. Parmesan cheese
- 2 Tbsp. garlic powder
Method
- Cook spinach using package directions; drain.
- Saute onions in margarine in skillet until onions are transparent.
- Stir in stuffing mix, beaten eggs, Parmesan cheese and garlic powder. Roll into small balls.
- Place on baking sheet; freeze.
- Bake at 400° for 15 to 20 minutes or until firm.
- Serve warm.
- May store frozen spinach balls in plastic bags in freezer and bake as needed.

- 112 servings.
