Ingredients
- 3 gal. spinach leaves
- 1-1/2 qt. red onions, chopped
- 48 each BOCA Original Vegan Burgers
- 8 each large tomatoes, each cut into 6 slices
- 48 each hamburger buns, split, toasted
- 3 cups crumbled feta cheese
Method
- Steam spinach and onions until spinach is wilted.
- Meanwhile, cook burgers as directed on package.
- For each serving: Place 1 tomato slice on bottom half of bun; top with burger, #24 scoop of the spinach mixture and 1 Tbsp.
- feta cheese.
- Cover with top of bun.
