Ingredients

  • 2 bacon slices- cooked and crumbed
  • 2 14 oz. cans chicken broth
  • 1/2 tsp. salt
  • 1 cup quick cooking grits
  • 2 lg. tomatoes, peeled and chopped or 1 can diced
  • 2 tbsp. canned chopped green chiles
  • 1 cup (4 oz) shredded cheddar cheese

Method

  • Cook bacon.
  • Gradually add salt and broth to bacon and drippings and bring to a boil.
  • Sir in grits tomato, chiles and return to a boil and stir often.
  • Reduce heat and simmer 15-20 minutes stirring often.
  • Stir in cheese - cover and let stand 5 minutes.
