Ingredients
- 2 bacon slices- cooked and crumbed
- 2 14 oz. cans chicken broth
- 1/2 tsp. salt
- 1 cup quick cooking grits
- 2 lg. tomatoes, peeled and chopped or 1 can diced
- 2 tbsp. canned chopped green chiles
- 1 cup (4 oz) shredded cheddar cheese
Method
- Cook bacon.
- Gradually add salt and broth to bacon and drippings and bring to a boil.
- Sir in grits tomato, chiles and return to a boil and stir often.
- Reduce heat and simmer 15-20 minutes stirring often.
- Stir in cheese - cover and let stand 5 minutes.
