Ingredients
- 1 tomato (Italian plum)
- 1 onion (green)
- 1/2 jalapeno pepper
- 4 ounce liquid egg whites
- 1/2 tablespoon olive oil
Method
- Heat olive oil in a nonstick skillet on medium heat. Rinse and chop tomato, green onion and jalapeno and saute for 4-5 minutes. Add egg whites to skillet, stir once and let cook without stirring for 2-3 minutes to set, then scramble until done. Serve.
