- 12 lb bulk pork sausage
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 cup chopped celery
- 16 ounces tomato juice
- 16 ounces whole tomatoes, undrained, chopped
- 1 tablespoon chili powder
- 1 tablespoon brown sugar, packed
- 1 bay leaf
- 15 ounces kidney beans, drained
Method
- In large saucepan or Dutch oven, brown sausage with onion, green pepper, and celery; drain.
- Add remaining ingredients except beans.
- Bring to a boil; reduce heat.
- Cover; simmer 45 min., stirring occasionally.
- Add beans, continue simmering, 10-15 minute.
