Ingredients

  • 12 lb bulk pork sausage
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 cup chopped celery
  • 16 ounces tomato juice
  • 16 ounces whole tomatoes, undrained, chopped
  • 1 tablespoon chili powder
  • 1 tablespoon brown sugar, packed
  • 1 bay leaf
  • 15 ounces kidney beans, drained

Method

  • In large saucepan or Dutch oven, brown sausage with onion, green pepper, and celery; drain.
  • Add remaining ingredients except beans.
  • Bring to a boil; reduce heat.
  • Cover; simmer 45 min., stirring occasionally.
  • Add beans, continue simmering, 10-15 minute.
