Ingredients

  • 4 dressed catfish
  • 1/4 c. yellow cornmeal
  • 1/4 c. dry bread crumbs
  • 1/2 tsp. salt or paprika
  • 1/2 tsp. garlic powder
  • 1/8 tsp. cayenne pepper
  • 1/8 tsp. ground thyme
  • 1/2 c. skim milk
  • 1/4 c. margarine, melted

Method

  • Use oven rack above middle of the oven.
  • Heat oven to 450°. Combine cornmeal, bread crumbs, salt, paprika, garlic powder, cayenne pepper and thyme.
  • Dip fish into milk.
  • Coat with cornmeal mixture.
  • Place in 13 x 9 x 2-inch rectangular pan, coated with vegetable cooking spray.
  • Pour margarine over fish.
  • Bake, uncovered, until fish flakes very easily with fork, about 15 to 20 minutes.
  • Makes 4 servings.
