Ingredients
- 1 red onion
- 1 tablespoon cumin
- 12 teaspoon paprika
- 12 teaspoon salt
- 14 teaspoon pepper
- 14 teaspoon cayenne
- 2 tablespoons olive oil
- 8 -10 carrots
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 14 cup of fresh mint
Method
- Saute thinly sliced red onion with cumin, paprika, salt, pepper and cayenne in 2 Tbsp Olive Oil about 5 minutes.
- Add julienned carrots and 1/2 cup water, stir often on medium high heat until tender crisp and water is evaporated.
- Whisk lemon juice with 2 Tbsp olive and honey.
- Toss with carrots.
- Sprinkle with chopped fresh mint.
- Serve warm or at room temperature.
