Ingredients

  • 1 red onion
  • 1 tablespoon cumin
  • 12 teaspoon paprika
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 14 teaspoon cayenne
  • 2 tablespoons olive oil
  • 8 -10 carrots
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 14 cup of fresh mint

Method

  • Saute thinly sliced red onion with cumin, paprika, salt, pepper and cayenne in 2 Tbsp Olive Oil about 5 minutes.
  • Add julienned carrots and 1/2 cup water, stir often on medium high heat until tender crisp and water is evaporated.
  • Whisk lemon juice with 2 Tbsp olive and honey.
  • Toss with carrots.
  • Sprinkle with chopped fresh mint.
  • Serve warm or at room temperature.
