Ingredients
- 1 1/4 c. flour
- 1/4 c. granulated sugar
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. butter or margarine
- 3 oz. softened cream cheese
- 1/2 c. coconut
- 1/2 c. apricot preserves
Method
- In large bowl, combine flour, sugar, baking powder and salt. Cut in margarine and cream cheese using pastry blender or fork, until mixture is crumbly.
- Add coconut and preserves.
- Blend well. Drop by rounded teaspoonfuls onto greased baking sheet.
- Bake at 350° for 15 to 18 minutes or until golden brown; cool before frosting.
