Ingredients

  • 1 1/4 c. flour
  • 1/4 c. granulated sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. butter or margarine
  • 3 oz. softened cream cheese
  • 1/2 c. coconut
  • 1/2 c. apricot preserves

Method

  • In large bowl, combine flour, sugar, baking powder and salt. Cut in margarine and cream cheese using pastry blender or fork, until mixture is crumbly.
  • Add coconut and preserves.
  • Blend well. Drop by rounded teaspoonfuls onto greased baking sheet.
  • Bake at 350° for 15 to 18 minutes or until golden brown; cool before frosting.
