Ingredients

  • 1 cup butter, at room temperature
  • 1 cup firmly packed brown sugar
  • 2 None large eggs
  • 1/3 cup honey or maple syrup
  • 1/3 cup all-purpose flour
  • 1 tsp baking soda
  • 3 tsp pumpkin pie spice
  • 2 None medium pears, peeled, quartered, cored, sliced thinly
  • None None powdered sugar, to dust
  • None None vanilla custard or heavy cream, to serve

Method

  • Preheat oven to 350°F. Grease and line an 8x12 inch rimmed baking pan with parchment paper, extending paper over long sides for handles.
  • In a stand mixer, beat butter and sugar until pale and creamy. Beat in eggs, 1 at a time, beating well between additions. Stir in honey. Sift flour, baking soda and spice mix over butter mixture. Add 1/4 cup hot water and stir until just combined. Transfer to prepared pan and smooth surface.
  • Arrange pears, overlapping slightly, over cake batter. Bake for 40-45 mins, or until a skewer inserted in the center comes out clean. Remove cake from oven. Let cake stand in pan for 5 mins then transfer to a wire rack to cool completely. Dust with powdered sugar.
  • Serve with custard.
