Ingredients

  • 2 tablespoons vegetable oil
  • 13 cup chopped yellow onion
  • 1 garlic clove, minced
  • 1 cup white rice
  • 1 12 cups chicken stock
  • 14 cup tomato sauce
  • 1 pinch cumin
  • 1 pinch smoked paprika
  • 1 pinch cayenne pepper
  • 6 -8 dashes TABASCO brand Chipotle Pepper Sauce

Method

  • Saute chopped onion and garlic in vegetable oil in a skillet.
  • I like to saute them on low for about 10-15 minutes to really flavor the oil and to keep the garlic from burning but this is not necessary.
  • If you prefer you can saute the onions until soft and then throw the garlic in for about 1 minute.
  • Add rice and saute for about 5 minutes over medium heat.
  • Add the chicken stock, tomato sauce, cumin, smoked paprika, cayenne, and tabasco sauce and stir to combine.
  • Bring to a boil, cover, and reduce heat to low.
  • Cook for 20 minutes.
