- 2 tablespoons vegetable oil
- 13 cup chopped yellow onion
- 1 garlic clove, minced
- 1 cup white rice
- 1 12 cups chicken stock
- 14 cup tomato sauce
- 1 pinch cumin
- 1 pinch smoked paprika
- 1 pinch cayenne pepper
- 6 -8 dashes TABASCO brand Chipotle Pepper Sauce
Method
- Saute chopped onion and garlic in vegetable oil in a skillet.
- I like to saute them on low for about 10-15 minutes to really flavor the oil and to keep the garlic from burning but this is not necessary.
- If you prefer you can saute the onions until soft and then throw the garlic in for about 1 minute.
- Add rice and saute for about 5 minutes over medium heat.
- Add the chicken stock, tomato sauce, cumin, smoked paprika, cayenne, and tabasco sauce and stir to combine.
- Bring to a boil, cover, and reduce heat to low.
- Cook for 20 minutes.
