Ingredients
- 1 1/2 c. cornmeal (yellow)
- dash of sugar (if you prefer "Yankee" cornbread)
- 1/2 tsp. soda
- 1 1/2 tsp. salt
- 1 tsp. baking powder
- 2 eggs, slightly beaten
- 1 1/4 c. buttermilk
- 2 Tbsp. melted shortening
Method
- Mix dry ingredients.
- Beat eggs with buttermilk and shortening.
- Add to dry ingredients and mix well.
- Heat a 9-inch cast-iron skillet (put a little oil in skillet) in a 450° oven. Pour mix in skillet and bake for 12 to 15 minutes.
- Take out and turn cornbread over and bake another 12 to 15 minutes.
