Ingredients

  • 1 1/2 c. cornmeal (yellow)
  • dash of sugar (if you prefer "Yankee" cornbread)
  • 1/2 tsp. soda
  • 1 1/2 tsp. salt
  • 1 tsp. baking powder
  • 2 eggs, slightly beaten
  • 1 1/4 c. buttermilk
  • 2 Tbsp. melted shortening

Method

  • Mix dry ingredients.
  • Beat eggs with buttermilk and shortening.
  • Add to dry ingredients and mix well.
  • Heat a 9-inch cast-iron skillet (put a little oil in skillet) in a 450° oven. Pour mix in skillet and bake for 12 to 15 minutes.
  • Take out and turn cornbread over and bake another 12 to 15 minutes.
