Ingredients

  • 1 1/2 lb. chuck beef, cubed
  • 1 bay leaf
  • 1 tsp. salt
  • 1 tsp. cumin
  • 1/2 tsp. pepper
  • 1 large garlic clove
  • 1 medium onion, diced
  • 3/4 tsp. oregano
  • 2 large potatoes, diced
  • 2 large carrots, chopped
  • 2 large celery stalks, chopped
  • 2 Tbsp. tomato paste
  • 2 large ears corn, cut in fourths
  • 1 c. frozen peas
  • 2 1/2 c. beef broth

Method

  • Cook meat and seasoning until meat is tender.
  • Add potatoes, carrots, celery and tomato paste.
  • Cook for 20 minutes.
  • Add peas, corn on cob and oregano.
  • Cook for additional 5 minutes.
