- 1 1/2 lb. chuck beef, cubed
- 1 bay leaf
- 1 tsp. salt
- 1 tsp. cumin
- 1/2 tsp. pepper
- 1 large garlic clove
- 1 medium onion, diced
- 3/4 tsp. oregano
- 2 large potatoes, diced
- 2 large carrots, chopped
- 2 large celery stalks, chopped
- 2 Tbsp. tomato paste
- 2 large ears corn, cut in fourths
- 1 c. frozen peas
- 2 1/2 c. beef broth
Method
- Cook meat and seasoning until meat is tender.
- Add potatoes, carrots, celery and tomato paste.
- Cook for 20 minutes.
- Add peas, corn on cob and oregano.
- Cook for additional 5 minutes.
