Ingredients
- 4 partridge breasts
- 1 cup olive oil
- 1 onion, sliced
- 5 garlic cloves, roasted
- 2 bay leaves
- 2 tablespoons vinegar
- salt & pepper
Method
- Heat the olive oil and add all the ingredients.
- cook slowly in a covered casserole until tender.Should the sauce become reduced and partridge are still tough, add 1 cup water (or more) until tender.
- Serve cold.
