Ingredients
- 1 c. corn meal
- 1/2 tsp. soda
- 1/2 tsp. salt
- 2 eggs, beaten
- 1 c. milk
- 1 can creamed corn
- 1/4 c. oil
- 1 lb. cooked ground beef
- 1 large, chopped onion
- 4 pods jalapenos, chopped
- 1/2 lb. grated Cheddar cheese
- 1/4 c. oil
Method
- Cook meat and onion well and drain.
- Heat a large iron skillet and add 1/4 cup of oil.
- Sprinkle corn meal in bottom of pan to keep cornbread from sticking.
- Pour 1/2 of the cornbread mixture in bottom of pan, then layer meat, jalapenos and cheese.
- Pour remaining cornbread mixture on top and bake in a 350° oven for 45 minutes.
