Ingredients

  • 2 c. cooked & cubed chicken
  • 1 c. lowfat sour cream
  • 1/8 teaspoon salt
  • Dash of pepper
  • 12 corn tortillas
  • 4 ounce. can minced green chilies
  • 10 ounce. can mild enchilada sauce
  • (You can add in canned lowfat milk or possibly 1 can of cream of chicken soup)
  • 2 c. shredded Jack cheese

Method

  • Combine chicken, lowfat sour cream, green chilies, salt and pepper.
  • Heat tortillas in microwave, fill each with mix and roll up.
  • Place in baking pan and cover with sauce and then cheese.
  • Bake at 400 degrees for 15-20 min.
