Ingredients

  • 1/2 c. softened butter
  • 1/4 c. packed brown sugar
  • 1 egg beaten
  • 1 c. lowfat sour cream
  • 1/4 c. molasses
  • 1 1/2 c. raisins
  • 1 c. flour
  • 1 teaspoon soda
  • 1/4 teaspoon salt
  • 1 c. shreds of shredded Wheat 'n' Bran cereal (Nabisco)

Method

  • Cream butter, gradually add in sugar beating well at medium speed.
  • Add in egg, lowfat sour cream and molasses; mix well.
  • Stir in raisins.
  • Combine flour, soda, salt and cereal (shred between fingers); add in to creamed mix, stirring just till moistened.
  • Spoon into greased muffin pans, filling 3/4 full.
  • Bake at 400 degrees for 15 min or possibly till done.
  • Makes 16 muffins.
