Ingredients

  • 1 pound salad or shell macaroni
  • 1 pound bacon ( thick sliced is good or use bacon ends, pieces)
  • 1 can peas
  • Exact proportions of the following are not important
  • diced bell pepper (any)
  • diced celery with leaves
  • sliced and diced green onions with tops
  • minced parsley
  • Extra Sharp White Cheddar (small dice)
  • Salt and Pepper
  • Mayonaise
  • Lemon juice to taste if desired

Method

  • Cook macaroni in boiling salted water until slightly underdone. Drain in colander and rinse with cold water. Pour can of Peas over macaroni when cooled to drain
  • Fry bacon until crisp but not overdone and drain on paper towel. When cool cut into small pieces.
  • Place above in a large bowl and add vegetables and cheese. Season with S and P and add mayonnaise. Add lemon juice to taste if desired. Mix all together, cover and refrigerate to allow flavors to meld and macaroni to absorb moisture.
