Ingredients

  • 1 pork tongue smoked
  • tortilla chips as needed
  • red onion Pickled, as needed
  • cilantro as needed
  • cotija cheese as needed
  • lime as needed
  • 2 carrots
  • 2 onions
  • 2 celery
  • 2 cloves garlic
  • 1 bunch spring onions
  • orange juice to taste
  • sour orange juice to taste
  • 2 plum tomatoes diced
  • 4 habanero chile seeded, diced
  • 3 jalapeno chilies seeded, diced
  • 2 aji chili peppers seeded, diced
  • 1 1/2 yellow onion diced
  • 1 clove garlic minced
  • 1/2 bunch cilantro chopped

Method

  • 1. Smoke tongue and braise in braising liquid until tender
  • 2. Slice
  • 1. Combine all ingredients except cilantro in saute pan, cook until desired consistency
  • 2. Puree with cilantro
  • 1. Toss smoked pork tongue in hot sauce
  • 2. Top tortilla chips with tongue, pickled onions, cheese, crema and limes
