Ingredients
- 1 (3 oz.) pkg. lemon gelatin
- 2 c. ground or grated carrots
- 1 (20 oz.) can crushed pineapple
- 1/2 c. sugar
Method
- Prepare gelatin and set aside to cool.
- Mix grated carrots, sugar and pineapple together.
- When gelatin is cool, add carrot-pineapple mixture.
- Pour into a 9 x 9-inch square dish and refrigerate until set.
- Cut into squares and serve on lettuce, if desired.
