- 2- 1/4 pounds Boneless Pork Leg
- 14 ounces, fluid No Salt Added Canned Diced Tomatoes
- 2 whole Red Onions, Peeled And Roughly Chopped
- 4 cloves Garlic, Peeled And Left Whole
- 3 Tablespoons Sugar
- 2 Tablespoons Paprika
- 1 Tablespoon Tomato Paste
- 2 teaspoons Brown Sugar
- 2 teaspoons Cayenne Pepper
- 1- 1/2 teaspoon Salt
- 1- 1/2 teaspoon Garlic Powder
- 1- 1/2 teaspoon Onion Powder
- 1- 1/2 teaspoon Pepper
Method
- 1.
- Preheat the oven to 320 degrees F.
- 2.
- In an oven-proof roasting dish with a lid, place all ingredients and stir to mix.
- Cover with lid and bake for 3 hours.
- 3.
- Turn the oven up to 430 degrees F. Remove the dish from the oven and shred the pork with 2 forks.
- When the pork is shredded, stir to incorporate with the sauce evenly.
- Bake, uncovered, for another 10-15 minutes.
- Adjust seasoning.
