Ingredients

  • 2- 1/4 pounds Boneless Pork Leg
  • 14 ounces, fluid No Salt Added Canned Diced Tomatoes
  • 2 whole Red Onions, Peeled And Roughly Chopped
  • 4 cloves Garlic, Peeled And Left Whole
  • 3 Tablespoons Sugar
  • 2 Tablespoons Paprika
  • 1 Tablespoon Tomato Paste
  • 2 teaspoons Brown Sugar
  • 2 teaspoons Cayenne Pepper
  • 1- 1/2 teaspoon Salt
  • 1- 1/2 teaspoon Garlic Powder
  • 1- 1/2 teaspoon Onion Powder
  • 1- 1/2 teaspoon Pepper

Method

  • 1.
  • Preheat the oven to 320 degrees F.
  • 2.
  • In an oven-proof roasting dish with a lid, place all ingredients and stir to mix.
  • Cover with lid and bake for 3 hours.
  • 3.
  • Turn the oven up to 430 degrees F. Remove the dish from the oven and shred the pork with 2 forks.
  • When the pork is shredded, stir to incorporate with the sauce evenly.
  • Bake, uncovered, for another 10-15 minutes.
  • Adjust seasoning.
