- 1 lb. ground turkey or lean ground meat
- 2 qt. water
- 4 bouillon cubes
- 5 potatoes, peeled and cubed
- 5 carrots, peeled and sliced
- 2 onions, chopped
- 1 c. barley
- 1/2 c. rice
- 1 (46 oz.) can V-8 juice
- 1 (28 oz.) can tomatoes
- 1 (15 oz.) can kidney beans
- celery salt (sprinkle)
- garlic salt (sprinkle)
- 1/4 c. parsley flakes
- salt and pepper to taste
Method
- Brown meat and set aside.
- In large pot, put water and bouillon cubes.
- Add potatoes, carrots, onions, barley, rice, juice and tomatoes.
- Cook 15 minutes.
- Add all remaining ingredients, including meat, and cook 45 minutes longer.
