Ingredients

  • 1 lb. ground turkey or lean ground meat
  • 2 qt. water
  • 4 bouillon cubes
  • 5 potatoes, peeled and cubed
  • 5 carrots, peeled and sliced
  • 2 onions, chopped
  • 1 c. barley
  • 1/2 c. rice
  • 1 (46 oz.) can V-8 juice
  • 1 (28 oz.) can tomatoes
  • 1 (15 oz.) can kidney beans
  • celery salt (sprinkle)
  • garlic salt (sprinkle)
  • 1/4 c. parsley flakes
  • salt and pepper to taste

Method

  • Brown meat and set aside.
  • In large pot, put water and bouillon cubes.
  • Add potatoes, carrots, onions, barley, rice, juice and tomatoes.
  • Cook 15 minutes.
  • Add all remaining ingredients, including meat, and cook 45 minutes longer.
