Ingredients

  • 2 eggs
  • 1 c. sugar
  • 2 c. buttermilk
  • 2/3 c. molasses
  • 3 c. flour, sifted
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • 1 c. oatmeal (not instant)
  • 1/2 c. nuts, chopped
  • 1 c. raisins

Method

  • Beat eggs until light.
  • Add sugar gradually, beating until fluffy.
  • Add molasses and buttermilk; mix well.
  • Sift together flour, salt, baking powder and baking soda.
  • Add to egg mixture and mix well.
  • Add oatmeal, nuts and raisins.
  • Stir only until blended.
  • Bake at 350° for 1 hour.
  • Store 1 day before slicing.
