Ingredients

  • 1 stick margarine
  • 1 c. sugar
  • 2 large eggs
  • 2 large ripe bananas, mashed
  • 2 c. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 c. buttermilk
  • 1/2 c. chopped pecans
  • 1 tsp. vanilla

Method

  • Preheat oven to 400°.
  • Grease a 12-cup muffin pan or use paper liners.
  • Beat together softened margarine and sugar at medium speed until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in bananas until smooth.
  • Mix together flour, salt, baking powder and soda.
  • Alternately stir in flour mixture and buttermilk into egg mixture until dry ingredients are just moistened.
  • Stir in nuts and vanilla; do not overmix. Fill cups 2/3 full.
  • Bake 15 to 18 minutes.
