Ingredients
- 1 stick margarine
- 1 c. sugar
- 2 large eggs
- 2 large ripe bananas, mashed
- 2 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 c. buttermilk
- 1/2 c. chopped pecans
- 1 tsp. vanilla
Method
- Preheat oven to 400°.
- Grease a 12-cup muffin pan or use paper liners.
- Beat together softened margarine and sugar at medium speed until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Beat in bananas until smooth.
- Mix together flour, salt, baking powder and soda.
- Alternately stir in flour mixture and buttermilk into egg mixture until dry ingredients are just moistened.
- Stir in nuts and vanilla; do not overmix. Fill cups 2/3 full.
- Bake 15 to 18 minutes.
