Ingredients

  • 1 lb. ground beef or cubed chicken
  • 1 medium brown onion, chopped
  • 1 tsp. garlic, minced
  • 1 doz. corn tortillas
  • 1/2 c. oil
  • 2 c. Cheddar cheese, shredded
  • 1 small can sliced olives
  • 1 large can enchilada sauce

Method

  • Cook meat in a large skillet 10 minutes on medium heat with onion and garlic; set aside in a bowl.
  • Cut tortillas into 2-inch strips, then in half again.
  • Heat oil in the skillet.
  • Fry a few of the tortilla strips at a time until crisp.
  • Drain oil.
  • In skillet, combine crisp tortilla strips and meat and onion mixture. Stir gently.
  • Add cheese, olives and enchilada sauce.
  • Simmer 15 minutes.
  • Serve with beans and rice.
  • Serves 6.
