Ingredients
- 1 lb. ground beef or cubed chicken
- 1 medium brown onion, chopped
- 1 tsp. garlic, minced
- 1 doz. corn tortillas
- 1/2 c. oil
- 2 c. Cheddar cheese, shredded
- 1 small can sliced olives
- 1 large can enchilada sauce
Method
- Cook meat in a large skillet 10 minutes on medium heat with onion and garlic; set aside in a bowl.
- Cut tortillas into 2-inch strips, then in half again.
- Heat oil in the skillet.
- Fry a few of the tortilla strips at a time until crisp.
- Drain oil.
- In skillet, combine crisp tortilla strips and meat and onion mixture. Stir gently.
- Add cheese, olives and enchilada sauce.
- Simmer 15 minutes.
- Serve with beans and rice.
- Serves 6.
