Ingredients

  • 2 lb. sausage
  • 1 large can chopped green chiles, drained
  • 6 c. frozen hash brown potatoes
  • 4 Tbsp. butter
  • 6 eggs, beaten
  • 1 1/2 tsp. salt, divided

Method

  • In skillet, cook sausage in small amount of water; drain. Add onion, green chiles (drained), 1/2 teaspoon salt and pepper. Saut.
  • Remove meat mixture.
  • Melt butter; add hash browns. Sprinkle with 1 teaspoon salt.
  • Press into pan lightly.
  • Add eggs. Spoon meat mixture in and sprinkle with cheese.
  • Cook on medium-low heat for 30 to 40 minutes.
  • Cut and serve.
  • Serves 6.
