Ingredients

  • 1 large Zucchini
  • 1 medium potato
  • 1 medium yellow onion
  • 1 red bell pepper
  • 1 1 large carrot
  • 1 firm tomato
  • 2 large florets of broccoli
  • 2 Tbs. of olive oil
  • 2 Tbs. worcheshire sauce
  • Soy sauce to taste
  • Tony Chacheres seasoning or any cajun like seasoning

Method

  • peel and slice Zucchini, potato, onion, red pepper and tomato. Cut carrot into long small pieces. Cut broccoli into small pieces. Place All vegetables except tomato into a fry pan with the olive oil and fry down until the vegetables become slightly soft. Add the tomato and the worcheshire sauce and continue to fry down for a few more minutes. Add the seasoning and Soy sauce to taste. The vegetables ought to be cooked but still firm.
