- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1 clove garlic, minced
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 (16 oz.) can stewed tomatoes
- 1 sliced smoked sausage
- 1/2 c. water
- 2 bay leaves
- 1/2 tsp. dried thyme
- 1/4 tsp. salt
- 1/2 tsp. basil
- 1/4 tsp. crushed red pepper
- dash of black pepper
- 1 c. rice (raw)
- 1 lb. shrimp
Method
- In saucepan, cook onion, green pepper and garlic in butter until tender.
- Stir in flour; blend well.
- Stir in undrained tomatoes, sausage, water, bay leaves, thyme, salt, basil, red pepper, pepper, uncooked rice and shrimp.
- Bring to a boil. Reduce heat; cover and cook over medium heat.
- Stir frequently for 10 to 15 minutes until rice and shrimp are done.
- Remove bay leaves.
- Serve.
- Makes 6 servings.
