Ingredients

  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 clove garlic, minced
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 (16 oz.) can stewed tomatoes
  • 1 sliced smoked sausage
  • 1/2 c. water
  • 2 bay leaves
  • 1/2 tsp. dried thyme
  • 1/4 tsp. salt
  • 1/2 tsp. basil
  • 1/4 tsp. crushed red pepper
  • dash of black pepper
  • 1 c. rice (raw)
  • 1 lb. shrimp

Method

  • In saucepan, cook onion, green pepper and garlic in butter until tender.
  • Stir in flour; blend well.
  • Stir in undrained tomatoes, sausage, water, bay leaves, thyme, salt, basil, red pepper, pepper, uncooked rice and shrimp.
  • Bring to a boil. Reduce heat; cover and cook over medium heat.
  • Stir frequently for 10 to 15 minutes until rice and shrimp are done.
  • Remove bay leaves.
  • Serve.
  • Makes 6 servings.
