Ingredients

  • 1/2 c. chopped onion
  • 1/2 to 1 1/2 tsp. curry powder
  • 1 Tbsp. butter
  • 1 can shrimp soup (frozen kind preferred)
  • 1 c. sour cream
  • 1 c. cooked shrimp
  • 1 c. raw rice
  • paprika

Method

  • In
  • top part of double boiler, simmer onion
  • and
  • curry powder in butter until tender.
  • Do not brown.
  • Add frozen soup and
  • stir until smooth.
  • Add sour cream and shrimp
  • and
  • heat until
  • hot all
  • through.
  • Serve over hot rice and
  • top
  • with paprika.

  • almost any
  • way
  • it's cooked.
  • This is one of my quickies they have
  • enjoyed through the years.
  • never serve this one with the traditional curry "boys,"
  • just
  • plain. But
  • chutney,
  • raisins, grated coconut, chopped green onions, etc., may be used.
