- 2 Tbsp. butter
- 1/2 c. minced onion
- 2 Tbsp. flour
- 1/4 c. diced celery
- 1 Tbsp. parsley
- 1/2 c. bell pepper
- dash of cayenne pepper
- 1 bay leaf
- 1/4 tsp. Tabasco sauce
- 1/2 tsp. salt
- 1 (6 1/4 oz.) can tomato paste
- 1 can tomato sauce
- 1 can tomatoes
- 5 c. water
- 3 c. cooked shrimp
- 1 1/2 c. cooked rice
Method
- In a large skillet, melt butter.
- Saute until limp, onion, bell pepper and celery.
- Blend in flour.
- Add parsley, cayenne pepper, Tabasco sauce, salt, tomato paste, tomato sauce, tomatoes and water.
- Add bay leaf but remove before serving.
- Cook for 30 minutes or until thick.
- Stir in shrimp and simmer for 20 minutes. Serve over rice.
- Serves 6.
