Ingredients

  • 2 Tbsp. butter
  • 1/2 c. minced onion
  • 2 Tbsp. flour
  • 1/4 c. diced celery
  • 1 Tbsp. parsley
  • 1/2 c. bell pepper
  • dash of cayenne pepper
  • 1 bay leaf
  • 1/4 tsp. Tabasco sauce
  • 1/2 tsp. salt
  • 1 (6 1/4 oz.) can tomato paste
  • 1 can tomato sauce
  • 1 can tomatoes
  • 5 c. water
  • 3 c. cooked shrimp
  • 1 1/2 c. cooked rice

Method

  • In a large skillet, melt butter.
  • Saute until limp, onion, bell pepper and celery.
  • Blend in flour.
  • Add parsley, cayenne pepper, Tabasco sauce, salt, tomato paste, tomato sauce, tomatoes and water.
  • Add bay leaf but remove before serving.
  • Cook for 30 minutes or until thick.
  • Stir in shrimp and simmer for 20 minutes. Serve over rice.
  • Serves 6.
