Ingredients
- 2 c. boiled rice
- 1/3 c. finely chopped onion
- 1 chopped chili pepper
- 1/4 c. chopped celery tips
- salt and paprika to taste
- 1 doz. medium size shrimp
- 2 Tbsp. butter
- 1 Tbsp. flour
- 1/2 c. tomato sauce
Method
- Line 1 1/2-quart casserole with 1 tablespoon butter.
- Pour in half of boiled rice.
- Place 1 tablespoon butter in pint size saucepan; add flour and brown.
- Add onion and chili pepper and cook 5 minutes, stirring constantly.
- Add shrimp, celery and tomato sauce.
- Salt and paprika to taste.
- Pour sauce in casserole; top with remaining rice.
- Bake in preheated oven at 350° for 25 minutes.
- Serve hot.
