Ingredients

  • 2 c. boiled rice
  • 1/3 c. finely chopped onion
  • 1 chopped chili pepper
  • 1/4 c. chopped celery tips
  • salt and paprika to taste
  • 1 doz. medium size shrimp
  • 2 Tbsp. butter
  • 1 Tbsp. flour
  • 1/2 c. tomato sauce

Method

  • Line 1 1/2-quart casserole with 1 tablespoon butter.
  • Pour in half of boiled rice.
  • Place 1 tablespoon butter in pint size saucepan; add flour and brown.
  • Add onion and chili pepper and cook 5 minutes, stirring constantly.
  • Add shrimp, celery and tomato sauce.
  • Salt and paprika to taste.
  • Pour sauce in casserole; top with remaining rice.
  • Bake in preheated oven at 350° for 25 minutes.
  • Serve hot.
