Ingredients
- 1 1/4 c. okra, cut in 1/4-inch slices (about 6 oz.)
- 1/2 c. green pepper, chopped
- 1/4 c. onion, finely chopped
- 2 Tbsp. water
- 1 (15 oz.) can tomatoes, cut up
- 3/4 tsp. sugar
- 1/4 tsp. black pepper
Method
- Place okra, green pepper, onion and water in a microwave-safe casserole. Cook, covered, 5 to 7 minutes until vegetables are done to your taste. Add tomatoes, sugar and pepper, stirring gently. Cook, covered, 2 more minutes or until heated through. Makes 6 servings.
