Ingredients

  • 2 whole chicken breasts (4 halves)
  • 1 pkg. frozen spinach, cooked and drained (I have used canned, too)
  • 1 egg
  • flour
  • 1/2 lemon (juice only)
  • Parmesan cheese
  • Mozzarella cheese
  • 1/2 c. chicken broth
  • 1/3 c. white wine

Method

  • Dip chicken in flour and egg. Brown in butter (about 4 minutes on each side).
  • Place chicken in baking dish and top each piece with small amount of spinach. Sprinkle with Parmesan cheese and put slice of Mozzarella cheese on each piece.
  • Bring chicken broth and wine to slow boil and add lemon juice.
  • Pour over chicken and bake in a 350° oven for 12 to 15 minutes. Good with fettucini.
