Ingredients

  • 10 large shrimp
  • 1 (4 oz.) can whole green chiles, cut lengthwise into strips
  • 10 strips bacon
  • 3 Tbsp. butter
  • 1/2 onion, diced
  • dash of paprika
  • 1 1/2 tsp. salt
  • dash of pepper
  • 1/2 tsp. garlic powder
  • 1 lime
  • 1/4 bunch fresh cilantro, chopped
  • 1/3 c. all-purpose flour
  • 1/4 c. dark beer
  • 1 large egg white
  • 1/2 tsp. salt, divided
  • 3/4 c. fine, dry, unseasoned bread crumbs
  • 1/4 c. finely chopped pecans (1 oz.)
  • 1/4 tsp. freshly ground black pepper
  • 1 lb. medium shrimp, peeled and deveined
  • 4 lemon wedges

Method

  • Preheat oven to 450°.
  • Lightly oil a rack large enough to hold shrimp in a single layer.
  • Put the rack on a baking sheet and set aside.
