Ingredients

  • 2 pound lean beef ribs
  • 1/4 c. peach preserves
  • 1/2 c. water
  • Juice of 1 lemon
  • 1 1/2 tbsp. brown sugar
  • 1 tbsp. vinegar
  • 1/2 teaspoon paprika
  • Freshly grnd black pepper
  • 2 tbsp. Worcestershire sauce

Method

  • Place the ribs on a rack in a shallow baking pan and roast at 450 degrees for 30 min.
  • In a small saucepan, combine all remaining ingredients and cook over medium heat till thickened, stirring constantly.
  • Set sauce aside.
  • Remove the ribs and rack from pan and pour off the fat.
  • Reduce oven heat to 350 degrees.
  • Return ribs to the pan, and pour the sauce over them.
  • Bake uncovered, basting occasionally, till ribs are tender, about 1 hour.
