Ingredients
- 2 lb. red potatoes
- 2 medium red and/or green peppers
- 2 tbsp. salad oil
- 1 3/4 tsp. salt
- 1/2 bunch green onions
- 1 1/4 lb. large shrimp
Method
- Preheat oven to 450 degrees F. In large roasting pan (17 inches by 11 1/2 inches), toss potatoes, peppers, salad oil, and 1 teaspoon salt.
- Roast vegetables in oven 30 minutes, stirring once halfway through cooking time.
- Meanwhile, slice green onions; peel and devein shrimp.
- In bowl, toss green onions, shrimp, and 3/4 teaspoon salt.
- Stir shrimp mixture into vegetable mixture; roast 10 minutes longer or until shrimp are opaque throughout and potatoes are fork-tender.
