Ingredients

  • 2 lb. red potatoes
  • 2 medium red and/or green peppers
  • 2 tbsp. salad oil
  • 1 3/4 tsp. salt
  • 1/2 bunch green onions
  • 1 1/4 lb. large shrimp

Method

  • Preheat oven to 450 degrees F. In large roasting pan (17 inches by 11 1/2 inches), toss potatoes, peppers, salad oil, and 1 teaspoon salt.
  • Roast vegetables in oven 30 minutes, stirring once halfway through cooking time.
  • Meanwhile, slice green onions; peel and devein shrimp.
  • In bowl, toss green onions, shrimp, and 3/4 teaspoon salt.
  • Stir shrimp mixture into vegetable mixture; roast 10 minutes longer or until shrimp are opaque throughout and potatoes are fork-tender.
