Ingredients
- 2 onions, chopped
- 1 1/2 lb. ground beef
- 1 c. cooked rice
- 1 c. chopped celery
- 1 c. sliced carrots
- 2 c. sliced potatoes
- salt and pepper as desired
- 2 cans cream of mushroom soup
Method
- Brown ground beef and onions in a skillet.
- Drain off grease. In a 9 x 13-inch baking dish that has been greased, layer meat and onion mixture, then layer the rice, carrots, potatoes and celery. Dilute mushroom soup with 1 1/2 cans of water.
- Mix well and pour over casserole.
- Bake at 350° for 1 hour and 10 minutes or until vegetables are cooked through.
