Ingredients

  • 2 onions, chopped
  • 1 1/2 lb. ground beef
  • 1 c. cooked rice
  • 1 c. chopped celery
  • 1 c. sliced carrots
  • 2 c. sliced potatoes
  • salt and pepper as desired
  • 2 cans cream of mushroom soup

Method

  • Brown ground beef and onions in a skillet.
  • Drain off grease. In a 9 x 13-inch baking dish that has been greased, layer meat and onion mixture, then layer the rice, carrots, potatoes and celery. Dilute mushroom soup with 1 1/2 cans of water.
  • Mix well and pour over casserole.
  • Bake at 350° for 1 hour and 10 minutes or until vegetables are cooked through.
