Ingredients

  • 1 c. chopped, cooked chicken
  • 2 Tbsp. chopped apple
  • 2 Tbsp. chopped green onion
  • 1 c. finely chopped peanuts
  • 1/2 c. mayonnaise
  • 1/2 tsp. curry powder
  • dash of hot sauce
  • 1 (7 oz.) bag shredded coconut

Method

  • Combine the chicken with the chopped apple, green onion, peanuts, the mayonnaise, curry powder and hot sauce in a large bowl, blending well.
  • Cover with plastic wrap and refrigerate for 4 hours or until well chilled.
  • Shape the chilled chicken mixture into 1-inch balls (about 1 tablespoon each).
  • Roll in the shredded coconut on wax paper.
  • Refrigerate until serving time.
  • Makes 24.
