Ingredients
- 1 c. chopped, cooked chicken
- 2 Tbsp. chopped apple
- 2 Tbsp. chopped green onion
- 1 c. finely chopped peanuts
- 1/2 c. mayonnaise
- 1/2 tsp. curry powder
- dash of hot sauce
- 1 (7 oz.) bag shredded coconut
Method
- Combine the chicken with the chopped apple, green onion, peanuts, the mayonnaise, curry powder and hot sauce in a large bowl, blending well.
- Cover with plastic wrap and refrigerate for 4 hours or until well chilled.
- Shape the chilled chicken mixture into 1-inch balls (about 1 tablespoon each).
- Roll in the shredded coconut on wax paper.
- Refrigerate until serving time.
- Makes 24.
