Ingredients
- 1 (5 to 7 lb.) pork roast
- 2 cans whole tomatoes
- red pepper
- 6 medium potatoes
- 4 carrots
- 1 small onion, chopped
Method
- Boil roast on low heat for 2 hours with red pepper.
- Take up and put in casserole bowl.
- Cut up tomatoes, potatoes, carrots and onion.
- Arrange over roast.
- Bake for 1 1/2 hours.
- Serve while hot.
